用仪器分析和化学分析相结合的方法,测定分析栝楼(Trichosanthes kirilowii Maxim)、双边栝楼(T.uniflora Hao)、大子栝楼(T.truncata C.B.Clarke)种子的营养成分,结果表明:3种栝楼种子的粗蛋白、粗脂肪和粗纤维的平均含量(g/100g)为:19.10、29.45、20.71,具有较高的营养价值。3种栝楼种子都含有大量的不饱和脂肪酸,不饱和脂肪酸总量均在89%以上;氨基酸共检出18种,必需氨基酸有8种,占氨基酸总量的29%以上;矿质元素种类齐全,高K低Na的特点明显,以Ca的含量较高,人体必需的Fe、Mn、Cu、Zn等微量元素的含量(μg/g)分别在201、56、23、68以上。 |

The nutritional components of T.kirilovoii,T.truncata,T.uniflora seeds were determined by chemical and apparatus analytical methods.The result showed that the average content (g/100g) of crude protein.Crude fat and crude fiber were 19.10、29.45、20.71 respectively,which means a high nutritional value.Unsaturated fatty acid in the seeds of those three species were abundant and its total content is over 89%.18 kinds of amino acid were detected,8 of which are essential amino acid.Nearly all kinds of mineral elements were detected,the character of high content of K and low content of Na was obvious,the content of Ca was at a high level.The contents (μg/g) of the essential elements to human body such as Fe,Mn,Cu,Zn were over 201,56,23,68. |
