添加糖化酶与HAADY对小曲米酒出酒率及洒质影响的研究

摘要:
在小曲米酒酿造过程中添加糖化酶及HAADY可提高出酒率492%~9.55%,并可提高酒的总酸、总酯含量.

Abstract:
