食品中反式脂肪酸的分析方法研究进展

摘    要:反式脂肪酸是一种具有反式构型的不饱和脂肪酸,流行病学调查研究表明,反式脂肪酸能诱发心血管疾病,对糖尿病人及胎儿生长发育等也会产生不利影响,因此粮农组织和世界卫生组织提出食品中反式脂肪酸的含量应低于4%。本文介绍了反式脂肪酸的结构、性质、食物来源及其分析方法研究进展,为建立反式脂肪酸的国标检测方法提供参考依据。

Abstract:Trans-fatty acid (TFA) is a kind of unsaturated-fatty acid with trans-configuration. The epidemiological survey data suggested that the intake of TFA increased incidence of cardiovascular diseases, and also did harm to diabetes patient as well as the growth and development of fetus. Partially due to these concerns, the Food and Agriculture Organization (FAO) and the World Health Organization (WHO) urged the food industry to reduce the presence of trans fats in their products to less than 4 %. The detective methods of TFA are under the establishing process. This paper reviewed the analysis methods of TFA in recent years to provide the useful data in the exploring of our official standard method.
