星洲鱼营养成分及有害物质的检测与分析 |

摘要: |
在广西武鸣县陆斡忠党水库养殖基地采集星洲鱼(Sarotherodon sp.)样品,检测分析星洲鱼样品中的氨基酸、蛋白质、维生素E和钙、铁、锌、硒等营养成分含量,以及铅、镉、砷、汞等重金属和磺胺类、喹乙醇、土霉素等药物残留量。结果显示,星洲鱼含有丰富的蛋白质(18.8%)、多种氨基酸和维生素E(20.0 mg/kg),以及人体所必需的钙(397 mg/kg)、铁(3.06mg/kg)、锌(4.70mg/kg)、硒(0.156mg/kg)等,而脂肪含量极低(2.40%)。星洲鱼体内重金属汞(0.00085mg/kg)、镉(0.001mg/kg)、砷(0.0051 mg/kg)、铅(0.011mg/kg)的含量远远低于NY 5053-2005指标要求,而磺胺类、喹乙醇、土霉素等抗生抗菌素药物残留均未检出。该基地养殖的星洲鱼营养成分齐全、含量均衡,是一种营养价值较高的淡水鱼产品。 |

Abstract: |
Nutrition contents such as amino, protein, vitamine E, calcimium, iron, zinc and selenium; heavy metal contents including lead, cadmium, arsenic and mercucy; medicament residues such as sulfanilamide, oloquindox and terramycin in Sarotherodon sp. in Luhanzhongdang Reservoir in Wuming Guangxi were tested. Results showed that the content of protein, vitamin E, calcium iron, zinc, selenium and fat in Sarotherodon sp. was 18.8%, 20.0 mg/kg, 397 mg/kg, 3.06mg/kg, 4.70mg/kg, 0.156mg/kg and 2.40%, respectively. There are also various amino acid in Sarotherodon sp.The concentration of lead, cadmium, arsenic and mercucy was 0.00085mg/kg, 0.001mg/kg, 0.0051 mg/kg and 0.011mg/kg, which is far less than the standard NY5053-2005. The medicament residues such as sulfanilamide, oloquindox and terramycin were not detected.Sarotherodon sp. in this base had a complete range of nutrients with balanced content and could be a valuable freshwater fish. |
